If you’re looking for authentic wood-fired pizza, La Gitana exceeded every expectation. The atmosphere was incredibly cozy and inviting, with warm lighting, lush plants, and a vibrant Flamenco performance happening when we arrived that made the experience feel truly special. Despite several private parties taking place, the restaurant never felt crowded or overwhelming. The staff offered multiple seating options, and the thoughtful layout kept the space welcoming and comfortable. ⭐⭐⭐⭐½ My son Jett and I recently enjoyed dinner at La Gitana in Olympia, and it was a wonderful experience from start to finish. It happened to be one of the busiest nights in town, with prom celebrations seemingly happening everywhere, and while we felt a little underdressed compared to the festive crowd, we were warmly welcomed and well taken care of throughout the evening by Eve and other servers that passing by. Delicious and authentic! The staff is kind and attentive. The authentic pizzas were delicious! I recommend the mushroom and Sausage with the truffle oil! And the prosciutto and burrata as well! The side salads were delicious as well! For those who partake, the house cocktails are amazing! I recommend the lemon drop! They also have a Basil martini that's interesting.

Ordered pizza online so it was ready when we arrived. Our pizza was ready, but the only reason I knock service is that we were not the only ones who didn’t know how to pick up our Togo order and i think signage at the door would be helpful. I appreciate this pizza option as a Gluten free option AND the ability to get a 1/2 & 1/2. I ordered 3 meats and Tropicana as well as extra crispy- the cupping pepperoni is top tier and as a fan of pineapple on pizza it was good, but I wish I had the option to a bbq sauce on it. First time visiting and I am so glad I did. I ordered one of their lunch specials, 9” pizza with two toppings and a soda, for $17.95. The staff exuded a vibe and atmosphere of relaxation and warmth without being inattentive. While the wood fired brick pizza oven initially drew me in, their friendly staff will keep me returning.
